1. Colour

Beer colour ranges from pale straw to deep black and is often the first sensory cue a drinker notices, immediately shaping expectations about strength, richness, and flavour before a sip is taken.

Colour is primarily driven by malt selection: pale base malts yield straw to golden beers, caramel and crystal malts introduce amber, copper, and reddish tones, while roasted malts contribute brown to opaque black shades. Notably, small amounts of dark malt can dramatically alter colour without dominating flavour.

Process choices further influence colour development, as longer or more vigorous boils deepen colour through Maillard reactions and caramelisation, while oxidation during brewing or aging can darken beer over time.

Colour is commonly referenced using SRM or EBC scales, which quantify how much light a beer absorbs; however, in practice, drinkers recognise colour primarily by hue and depth rather than numeric values.

Because colour carries strong perceptual weight, darker beers are often assumed to be heavier, sweeter, or stronger, even when body and alcohol content suggest otherwise.

2. Clarity

Clarity describes how transparent or hazy a beer appears, ranging from brilliant brightness to full opacity.

It is shaped by yeast in suspension, proteins from grains such as wheat or oats, hop-derived polyphenols, and clarification methods including filtration, fining, or centrifugation. Certain fermentation practices and dry hopping regimes intentionally promote stable haze.

Clarity is assessed visually by holding the glass to light and observing whether objects are visible through the beer, recognising that haze may be temporary or permanent depending on its source.

Bright clarity often signals crispness and refinement, while haze tends to suggest softness or juiciness before tasting.

Because clarity carries cultural expectations, beers that look atypical for their style are frequently judged before flavour is assessed.

3. Malt Aroma

Malt aroma forms the foundational aromatic layer of beer and provides much of its perceived richness.

Depending on malt type and processing, aromas may include bread, biscuit, honey, caramel, toffee, chocolate, coffee, or roasted notes, with kilning and roasting intensity determining which compounds dominate.

Malt aroma is best recognised just above the foam in a freshly poured beer, where volatile compounds concentrate.

Because malt aromas are often associated with sweetness, drinkers may perceive beers as richer or sweeter than they truly are.

This association is particularly strong in darker or malt-forward styles.

4. Hop Aroma

Hop aroma contributes freshness, complexity, and stylistic identity, particularly in hop-forward beers.

Hop variety and addition timing shape aromatic expression, ranging from citrus, tropical fruit, and stone fruit to pine, resin, floral, herbal, or spicy notes.

Late hopping, whirlpool additions, and dry hopping maximise aroma retention while limiting bitterness extraction.

Hop aroma is best assessed by gently inhaling near the foam rather than deeply sniffing.

Because hop aroma is strongly associated with freshness, intense aroma does not necessarily imply high bitterness.

5. Yeast Aroma

Yeast-derived aromas can define a beer’s identity as strongly as malt or hops.

Depending on strain and fermentation conditions, yeast may produce fruity esters, spicy phenols, rustic farmhouse notes, or remain very clean and neutral.

Fermentation temperature, oxygen availability, and pressure strongly influence which aromatic compounds dominate.

These aromas serve as core style markers in many beers.

When they appear outside their expected context, the same aromas may be perceived as flaws rather than character.

6. Special Aroma

Special aromas encompass all aromatic elements outside the malt–hop–yeast triad.

They may originate from spices, fruit additions, lactic fermentation, Brettanomyces, smoke, wood contact, or other adjuncts.

Such aromas are often immediately recognisable and may dominate the overall sensory impression.

Judges assess whether these aromas complement or overpower the base beer.

Declared and intentional special aromas are generally welcomed, while unexpected ones are judged harshly.

7. Sweetness

Sweetness reflects the perception of residual sugars and sweet-tasting compounds present after fermentation.

It is influenced by mash profile, yeast attenuation, malt selection, and adjuncts such as lactose or sugar syrups.

Alcohol can enhance sweetness perception even when sugar content is low.

Sweetness is sensed primarily mid-palate and into the finish.

Aromatic cues like caramel or honey often amplify perceived sweetness beyond actual sugar levels.

8. Sourness

Sourness describes acidity in beer, ranging from subtle tartness to sharp intensity.

It is driven by lactic or acetic acids from fermentation, fruit additions, or acidified ingredients, with mixed fermentations often combining multiple acid sources.

Sourness is felt on the sides of the tongue and back of the jaw.

At moderate levels it can feel refreshing, while higher intensity may feel aggressive.

For unfamiliar drinkers, sourness is sometimes associated with spoilage rather than intention.

9. Bitterness (Perceived)

Perceived bitterness describes how bitter a beer tastes, which is distinct from measured IBU.

It is shaped by hop additions, malt balance, body, pH, and carbonation.

Roasted malts contribute a different, often more acrid bitterness than hops.

Bitterness is most noticeable in the aftertaste and finish.

Drinkers frequently blur bitterness and hop aroma into a single “hoppy” impression.

10. Body

Higher carbonation can make beers feel lighter than their actual body.

This interaction often affects perceived drinkability.

11. Astringency

Astringency is a tactile mouthfeel sensation described as drying or gripping rather than a flavour.

It is caused by polyphenols from malt husks, hops, fruit skins, wood contact, or excessive extraction during brewing.

Astringency is felt on the tongue, gums, and cheeks after swallowing and often lingers into the finish.

In moderation it can add structure and crispness.

When excessive, it becomes harsh and coarse.

12. Carbonation

Carbonation describes the level of dissolved carbon dioxide in beer and strongly influences mouthfeel and aroma release.

Carbonation is produced during fermentation and controlled through conditioning and packaging choices.

Low carbonation tends to feel soft and smooth, while higher carbonation creates a sharper, more lively impression.

Finish length describes how long flavours persist after swallowing.

It is influenced by hop compounds, roasted malts, alcohol, and residual sugars.

A short finish clears quickly and enhances refreshment.

Finish length strongly affects balance and overall drinkability.

15. Oxidation

Oxidation describes sensory changes caused by oxygen exposure over time.

Unintended oxidation may introduce papery or stale notes.

In contrast, controlled aging can produce sherry-like, nutty, or dried-fruit complexity.

Oxidation often darkens colour and reduces foam stability.

Whether oxidation is perceived as a flaw or a feature depends on style, strength, and intent.

How to Use This Sensory Model in Practice

The Global Beer Index sensory model is designed to make beer tasting structured, repeatable, and comparable. Instead of relying on vague impressions, this framework helps you evaluate beer using clearly defined intensity levels and consistent sensory criteria.

Follow these five steps when tasting:

  1. Observe Appearance

    Start with colour and clarity. Assess the beer visually and place it on the colour spectrum (SRM/EBC reference) and clarity scale. Appearance often shapes expectation before aroma or flavour is perceived.

  2. Evaluate Aroma Intensity and Type

    Gently swirl the glass and assess aroma using the 0–4 intensity scale:

    • 0 = none
    • 1 = low
    • 2 = medium
    • 3 = high
    • 4 = very high

    Identify whether the dominant expression comes from:

    • malt
    • hops
    • yeast / fermentation
    • special markers (fruit, spice, smoke, funk, etc.)
  3. Assess Core Taste Elements

    Take a small sip and evaluate:

    • sweetness
    • sourness
    • perceived bitterness

    Consider how these elements interact. Is bitterness balancing sweetness? Is acidity refreshing or dominant? Use the same 0–4 scale for consistency.

  4. Analyze Mouthfeel and Alcohol Expression

    Evaluate:

    • body (light → full)
    • carbonation level
    • astringency
    • alcohol warmth

    These structural elements often define style identity as strongly as aroma does.

  5. Evaluate Finish and Overall Balance

    How long does flavour persist after swallowing? Is the finish short, medium, long, or very long? Does the beer feel balanced, dry, sweet, warming, crisp, or lingering?
