The Global Beer Index (GBI) uses a consistent 15-element sensory model to describe every beer style in an objective and comparable way.

This guide explains how to taste beer using that same structure. It shows how your observations map directly onto the GBI Sensory Overview and the Style Standard,
without introducing any sensory elements that fall outside the model.

A structured method allows you to evaluate beer with clarity, consistency, and repeatability.
Using the same sensory sequence every time removes guesswork and ensures your observations are comparable across styles, regions, and tasting sessions.

2. Before You Start

Create the right conditions

A reliable evaluation requires a stable environment.

Temperature

Serve the beer close to its style-appropriate temperature. Too cold suppresses aroma; too warm exaggerates heaviness or alcohol.

Glassware

Use clean, scent-free glassware. Any detergent residue, grease, or dust will distort aroma and foam behaviour.

Environment

Neutral scents and good lighting matter. Avoid food, candles, perfume, smoke, or strong background aromas.

Pouring

Pour consistently. A suitable head helps aroma release, but foam is not part of the GBI sensory model (see further below).

Prepare yourself

• Keep the palate neutral: water and mild crackers work well.
• Avoid toothpaste, chewing gum, coffee, or strong flavours shortly before tasting.
• Approach tasting as a structured examination, not impressionistic guessing.

Why structure matters

Beer expresses appearance, aroma, flavour, and mouthfeel simultaneously. A structured approach breaks this into layers, helping you understand what you perceive and ensuring notes are consistent and replicable.

4. Step 1 — Visual Assessment

Examine the beer before swirling or smelling.

Colour

Compare the colour in neutral lighting.
The GBI colour scale ranges from pale straw to black. Colour is style-dependent and is not a quality judgment by itself.

Clarity

Determine whether the beer is brilliant, clear, slightly hazy, hazy, or opaque.
Different styles have different expectations: a German Pils should be clear; a NEIPA should be hazy.

Carbonation activity

Observe bubble size and activity. This visual cue supports your later mouthfeel expectations.

Foam / Head Formation

Foam can offer contextual observations, but it is not included in the GBI sensory framework.
Head formation and retention are strongly influenced by glass cleanliness, pour technique, temperature, and timing.
For this reason, foam should not be used as a standardized sensory metric or to evaluate style correctness.

5. Step 2 — Aroma Evaluation

Begin by smelling the beer without swirling; then swirl gently to release more volatile compounds.

Malt Aroma

Look for notes such as bready, grainy, caramel, toffee, chocolate, roast, or biscuit-like character.

Hop Aroma

Hop-driven notes may include citrus, tropical fruit, stonefruit, melon, floral, herbal, spicy, resinous, or earthy impressions, depending on style and hop intensity.

Yeast Aroma

Yeast contributes clean, estery, phenolic, spicy, rustic, or mixed-fermentation character.
Examples include banana or clove in wheat beers, peppery phenolics in saison, or neutral profiles in lagers.

Special Aroma Markers

Some styles present additional aromatic categories: tart, lactic, bubblegum, brett funk, smoky notes, or spice additions.
These markers help distinguish styles with characteristic fermentation profiles or adjuncts.

6. Step 3 — Flavour Structure

Take a sip and allow the beer to move across your palate. Consider the following individually — these are all part of the GBI model.

Sweetness

Perceived sweetness ranges from none to high. It can support malt-forward styles or counterbalance bitterness or acidity.

Sourness

Acidity can be barely noticeable, moderately tart, or sharply sour.
Sourness is expected in styles like Berliner Weisse or Gose, but not in most ales and lagers.

Bitterness (Perceived)

Bitterness may be soft, moderate, assertive, or dominant. Consider whether it fades quickly or lingers.

Salt & Umami (Not Part of the GBI Model)

These taste dimensions rarely appear in beer.
They are not included in the GBI sensory framework.
You may occasionally perceive:

• slight salinity in Gose
• subtle umami-like depth in strong dark beers

These impressions are contextual, not standardized metrics.

7. Balance, Progression & Transitions (Interpretive Layer)

Balance is not a metric in the GBI model. Instead, balance describes how the existing sensory elements interact: • sweetness • sourness • bitterness • alcohol warmth • body • carbonation A beer with medium sweetness and high bitterness may still feel “balanced” if these intensities complement each other. Transitions describe how perceptions evolve from first sip to mid-palate to finish. These insights help drinkers interpret a beer but do not alter the sensory metrics themselves.

8. Step 4 — Mouthfeel

Mouthfeel consists of several elements that are in the model, plus descriptive language based on their interaction.

Body

From low to very high. Heavier bodies contribute to richness; lighter bodies enhance drinkability.

Carbonation

Carbonation can feel gentle, moderate, sharp, or effervescent. High carbonation increases perceived refreshment and may enhance bitterness.

Astringency

A drying or gripping sensation, often from dark malts, tannins, or certain processes. Acceptable in some styles; distracting in others.

Alcohol Warmth

Note whether alcohol is subtle, noticeable, or dominant.
Warmth contributes to perceived structure in stronger beers.

Texture (Descriptive, Not a Separate Metric)

Terms such as “creamy”, “silky”, “sharp”, “prickly”, or “smooth” come from combinations of body, carbonation, astringency, and alcohol warmth.
GBI does not treat texture as its own metric; it is an interpretive descriptor that emerges from the model’s existing mouthfeel elements.

9. Step 5 — Finish & Aftertaste

Finish Length (In the GBI Model)

The model measures only the duration of flavour persistence:

• short
• medium
• long
• very long

This defines how long the beer continues to express itself after swallowing.

Finish Character (Not a Model Metric)

Descriptors like dry, bitter, sweetening, carbonic,
or astringent are outcomes of other sensory elements,
not the finish metric itself.

For example:

Dry → typically lower sweetness + higher bitterness + moderate carbonation
Bitter finish → driven by perceived bitterness + astringency
Sweet finish → residual sweetness + low bitterness

These belong to interpretive commentary, not the model’s structure.

10. Recognising Common Faults

Fault recognition is not part of the sensory model but can improve your tasting accuracy.

Common issues include:

Oxidation

papery, stale, or sherry-like notes

Lightstruck

skunky character from UV exposure

Diacetyl

buttery or butterscotch aroma

Unintended sourness

lactic or acetic acidity in non-sour styles

Phenolic faults

medicinal or plastic notes if not style-appropriate
